# Mayonnaise Was Almost Certainly Invented During a Military Siege. No Kitchen Was Involved.

In 1756, the [Duke of Richelieu](https://en.wikipedia.org/wiki/Cardinal_Richelieu)
 was laying siege to the port of Mahon on the island of Minorca. He had just driven out the British. He was hungry. His cook had almost nothing left in the kitchen. What the cook improvised that day would end up on every table in the Western world for the next three centuries.

The sauce had no name yet. It was egg yolk and oil, beaten together until they became something neither ingredient could become alone. A transformation so improbable that nobody quite understands the chemistry even now. The cook did not know he was inventing anything. He was just trying to feed a general.

The French, of course, dispute this. They always do, I do too 😊. Some insist the name comes from the Old French word *moyeu*, meaning egg yolk. Others point to the town of Bayonne and its *bayonnaise* sauce. There is a third theory involving [Cardinal Mazarin](https://en.wikipedia.org/wiki/Cardinal_Mazarin)
 and a feast in Paris decades earlier. Every version has its defenders. Every version is missing something.

What is not disputed is this: before 1756, there is no written record of anything called mayonnaise. After Mahon, the references begin to multiply. A sauce named for a siege. A condiment born from a shortage. A culinary accident that became a global staple.

The chemistry matters here. Mayonnaise is an emulsion, which means it should not exist. Oil and water do not mix. They separate, always, unless something forces them together. That something is lecithin, a molecule found in egg yolk that has one end attracted to water and one end attracted to fat. It positions itself at the boundary between the two and holds them in suspension. Beat long enough and hard enough, and you get a stable cream from two things that refuse to combine on their own.

Nobody in 1756 knew any of this. The cook just beat it until it worked.

Spain, naturally, has its own version of the story. The Menorcans call it *salsa mahonesa* and will tell you, with complete seriousness, that the sauce is theirs and the French took it the same way the French have taken everything else. There is something to this. The island of Minorca had been under British control for decades before Richelieu arrived. The local sauce culture was already there. The general’s cook did not invent from nothing. He borrowed, adapted, and survived the night.

That is, arguably, the true history of every great food. Not invention. Theft with better branding.

Today, the debate continues on cooking forums, in food history books, in arguments between French and Spanish food historians at conferences where everyone is too polite to raise their voice. The sauce itself does not care. It sits in refrigerators on six continents, on sandwiches, in salads, beside chips and beside sushi, indifferent to its own contested origin.

The Duke of Richelieu did not record what he ate that night in Mahon. History rarely notes what the victorious general had for dinner. But somewhere between the siege and the surrender, a cook with almost nothing made something that outlasted the battle, the general, the British garrison, and every written account of who actually invented it.
