## Simple, Not Easy

*You’d think boiling an egg is easy*, until the shell cracks, the yolk turns grey, or it just won’t peel without turning into modern art. But fear not, Chef. Whether you’re building brunch or prepping a Niçoise salad, mastering the humble boiled egg is a foundational skill every cook should have. It’s not just technique; it’s a rite of passage.

### Choose Your Level: Soft, Medium, or Hard?

Let’s start with the goal. Here’s a quick guide based on large eggs straight from the fridge:

| Doneness | Yolks Look Like | Time in Boiling Water |
| --- | --- | --- |
| Soft | Runny and golden | 6 minutes |
| Medium | Slightly creamy | 8 minutes |
| Hard | Fully set, bright | 10 minutes |

*A note for the perfectionists:* Add 30 seconds for extra-large eggs, subtract 15 seconds for room-temp eggs.

### Method: Step-by-Step

1. **Prep the Eggs:** Use a pin to prick the wide end if you want to reduce cracking. Optional, but chef-approved.
2. **Bring Water to a Gentle Boil:** Enough to cover the eggs by 1 inch.
3. **Lower Eggs In Gently:** Use a spoon. *We’re cooking, not bowling.*
4. **Start the Timer:** The moment they hit the water.
5. **Mind the Boil:** Maintain a steady simmer. Rolling boil = rubbery whites.
6. **Ice Bath Finish:** When time’s up, plunge eggs into ice water for at least 5 minutes. This stops cooking *and* makes peeling much easier.

### Troubleshooting: Cracks, Grey Rings & Sticky Shells

- **Cracked Eggs?** Cold egg, hot water. Try room temp or lower in gently.
- **Green-Grey Yolks?** Overcooked. *Watch the timer like it owes you money.*
- **Hard to Peel?** Too fresh! Older eggs peel better. Ice baths help too.
