The bottle sits on the counter in almost every home kitchen I have visited: a good extra virgin olive oil, probably expensive, probably chosen with some care, used for everything from frying an egg to roasting a chicken. It is the default. It is what people reach for. In a professional kitchen, it is kept well away from the stove.

This is not snobbery. It is not a preference. It is the result of what happens to extra virgin olive oil when it meets sustained high heat, and once you understand the chemistry, you stop reaching for it automatically and start reaching for it deliberately, which is a different thing entirely.

### What Heat Does to Extra Virgin Olive Oil

Extra virgin olive oil earns its classification through low acidity and minimal processing. What makes it valuable are exactly the compounds that make it fragile: polyphenols, chlorophyll, volatile aromatic molecules, and free fatty acids that give it its flavour, its colour, and its nutritional character. These compounds begin to degrade well before the oil reaches its smoke point. The grassy, peppery, sometimes bitter notes that distinguish a good extra virgin olive oil from a supermarket blend are the first things to go when the pan gets hot.

The smoke point of extra virgin olive oil is typically cited between approximately 190 and 207 degrees Celsius, though it varies with quality and acidity level. Lower-quality oils with higher free fatty acid content can begin to smoke considerably earlier. Harold McGee’s detailed account of fat chemistry in [On Food and Cooking](#books)
explains the mechanism: when fats are heated past their smoke point, they break down into glycerol and free fatty acids, the glycerol decomposes into acrolein, and the result is the blue-grey smoke that signals the oil is past the point of usefulness. By that stage, whatever made the extra virgin classification worth paying for has already been destroyed.

> **The polyphenols, aromatics, and volatile compounds that give extra virgin olive oil its flavour and nutritional value begin degrading before the oil reaches its smoke point. By the time the pan is hot enough to sear meat properly, those compounds are gone. You are cooking with expensive neutral fat.**

### The Cost Calculation Professional Kitchens Make

There is also a practical dimension that home cooks rarely consider. A professional kitchen cooking at volume goes through cooking fat in quantities that make the cost of extra virgin olive oil prohibitive for high-heat applications. A restaurant using good extra virgin oil at searing temperatures would be spending money to destroy what makes that oil worth buying, while simultaneously producing a pan full of degraded flavour compounds that compete with the food being cooked. The economics alone would prevent it, even if the chemistry were more forgiving.

Samin Nosrat’s framework for understanding fat in [Salt, Fat, Acid, Heat](#books)
draws a clear distinction between fats used for cooking and fats used for finishing. The distinction is not arbitrary. It reflects the practical reality that the properties we value in a finishing fat, complexity, aroma, fruitiness, are properties that survive only when not subjected to prolonged heat. A fat that is cooked is not the same fat that is drizzled.

> **Professional kitchens distinguish between cooking fats and finishing fats as a matter of basic technique. Extra virgin olive oil is a finishing fat. Using it as a cooking fat wastes both its cost and its character.**

### What Is Actually in the Professional Kitchen

The oils that professional kitchens use for high-heat cooking share common properties: high smoke points, neutral or near-neutral flavour profiles, and consistent behaviour across a range of temperatures. Refined sunflower oil, with a smoke point around 227 degrees Celsius, is common in European kitchens for sauteing and deep frying. Grapeseed oil, with a smoke point around 216 degrees and a genuinely neutral flavour, is a standard choice in French kitchens for anything where oil flavour should not feature in the dish. Canola oil, around 204 degrees, is widely used for its cost efficiency and flavour neutrality.

Pure olive oil, sometimes labelled light olive oil, is refined rather than cold-pressed, and its smoke point is roughly 240 degrees Celsius. It has none of the polyphenols or aromatics of extra virgin and costs considerably less per litre. Professional kitchens use it where they want the suggestion of olive oil character without the heat instability. For high-temperature searing, clarified butter is the traditional choice in classical French cooking: the milk solids that cause whole butter to burn have been removed, raising the smoke point to approximately 250 degrees and leaving a fat that withstands high heat while contributing a clean dairy richness to the fond.

J. Kenji Lopez-Alt’s systematic testing of cooking fats across dozens of applications in [The Food Lab](#books)
repeatedly arrives at the same conclusion: the choice of cooking fat matters primarily for its smoke point, its flavour neutrality at high temperatures, and its cost efficiency. Extra virgin olive oil fails on the first two counts at the temperatures professional cooking requires.

### Where Extra Virgin Olive Oil Actually Belongs

None of this means extra virgin olive oil has no place in a professional kitchen. It has a specific and important place, which is everywhere heat is not involved. A good extra virgin olive oil finishes a dish of pasta after it comes off the heat. It goes into a vinaigrette that will never see a flame. It is drizzled over a [bruschetta](https://beestrot.com/recipe/bruschetta/)
, emulsified into a cold sauce, or used as the fat in a pesto where the food processor generates no meaningful heat. At room temperature or below, it does everything it is supposed to do.

The principle is straightforward: use neutral, high-smoke-point fats for cooking, and use extra virgin olive oil for anything where its flavour will survive and be tasted. A restaurant kitchen that pours extra virgin oil into a screaming hot pan is not cooking with better ingredients. It is burning better ingredients.

> **Extra virgin olive oil belongs in every professional kitchen. It belongs in the cold preparations, the dressings, the finishing touches, and the table service. It does not belong in a hot pan. That is not a rule against it. That is the rule that protects it.**

*A recipe is a promise. A technique is the truth behind it.*
