Two slices of bread, butter, and cheese transform into pure magic when treated with respect and proper technique. Our elevated version combines aged cheddar with nutty Gruyère for complexity, uses mayonnaise on the outside for superior browning, and employs the low-and-slow method that ensures melted perfection inside with golden crispiness outside. Sometimes the simplest pleasures require the most careful attention.

**Cooking Method:** Stovetop - Sauteing

#### Ingredients

- 4 slices good quality bread (like sourdough or brioche)
- 4 oz aged cheddar cheese (sliced)
- 2 oz Gruyère cheese (sliced)
- 2 tablespoons mayonnaise
- 2 tablespoons butter (softened)
- Optional: thin tomato slices
- Dijon mustard

#### Instructions

1. Let ingredients come to room temperature for even melting - cold cheese won't melt properly before the bread burns!
2. Layer the cheeses between bread slices, alternating cheddar and Gruyère for optimal melting and flavor.
3. Spread mayonnaise thinly on the outside of each sandwich - this is the secret to perfect browning!
4. Heat a large skillet over medium-low heat and add a pat of butter.
5. Place sandwiches in pan and cook slowly, about 3-4 minutes per side, until deep golden brown and cheese is completely melted - patience is key here!
6. Press gently with spatula to ensure even contact and melting, but don't smash the sandwich.
7. Flip carefully when the first side is perfectly golden and crispy.
8. Cook second side until equally golden and cheese is visibly melted and oozing slightly.
9. Remove from heat and let rest for 1 minute before cutting diagonally - this prevents all the cheese from escaping!
10. Serve immediately while the cheese is still molten and stretchy.

### Storage & Make-Ahead [#](#)

**Storage Advice:** Best eaten immediately while cheese is molten. Can be kept warm in 200°F (95°C) oven for short periods if needed.

**Make-Ahead & Freezing Tips:** Not suitable for freezing as texture changes dramatically. Best made fresh for optimal cheese stretch and bread crispness.
