Moussaka is Greece's answer to lasagna - and depending on who you ask, the superior version. Layers of fried eggplant, spiced ground lamb or beef in a rich tomato sauce, and a thick crown of golden bechamel baked until trembling and fragrant, this dish is the centerpiece of Sunday tables from Athens to Thessaloniki. The dish has Ottoman roots but was refined into its modern form by legendary Greek chef Nikolaos Tselementes in the 1920s, who added the bechamel topping that made it immortal. It improves dramatically the next day - if it survives that long.

**Cooking Method:** Baking

#### Ingredients

- 2 large eggplants (sliced into 1 cm rounds)
- 1.5 lbs ground lamb (or beef)
- 1 large onion (finely diced)
- 4 garlic cloves (minced)
- 1 can (14 oz) crushed tomatoes
- 1/2 cup dry red wine
- 2 tsp cinnamon
- 1 tsp allspice
- 1 tsp dried oregano
- 2 tbsp tomato paste
- olive oil for frying
- salt and pepper
- For bechamel: 4 tbsp butter / 1/3 cup all-purpose flour / 2.5 cups warm whole milk / 2 egg yolks / pinch of nutmeg / 50g grated kefalotyri or Parmesan / salt and white pepper

#### Instructions

1. Salt eggplant slices generously on both sides and let drain on paper towels for 20 minutes - this draws out bitterness and excess moisture. Pat dry thoroughly.
2. Fry eggplant in batches in olive oil over medium-high heat until golden on both sides, about 3 minutes per side. Drain on paper towels. Alternatively, brush with oil and roast at 425 degrees F (220 degrees C) for 20 minutes - less oil, same result.
3. Make the meat sauce: cook onion in olive oil until soft, add garlic 1 minute. Add ground meat and brown well, breaking up lumps. Add wine and let it bubble away. Add tomatoes, tomato paste, cinnamon, allspice, and oregano. Simmer 20 minutes until thick. The cinnamon is not optional and not a mistake - it is what makes moussaka smell like Greece. Season well.
4. Make bechamel: melt butter, whisk in flour and cook 2 minutes. Add warm milk gradually, whisking constantly until thick and smooth, about 8 minutes. Remove from heat, whisk in egg yolks and cheese. Season with nutmeg, salt, and white pepper.
5. Preheat oven to 375 degrees F (190 degrees C). In a baking dish, layer half the eggplant, all the meat sauce, then remaining eggplant. Pour bechamel over the top and spread evenly.
6. Bake 45 minutes until the top is deep golden brown and a knife inserted in the center comes out hot. Rest 20 minutes before cutting - this is the hardest part of the whole recipe, but essential for clean slices.

### Storage & Make-Ahead [#](#)

**Storage Advice:** Refrigerate up to 4 days. Flavor improves overnight. Reheat individual portions in microwave or whole dish covered in a 350 degrees F (175 degrees C) oven for 20 minutes.

**Make-Ahead & Freezing Tips:** Freeze cooked moussaka up to 3 months. Portion before freezing for easier reheating. Thaw overnight and reheat covered in oven.

### Serving & Variations [#](#)

**Serving Suggestions:** Serve in generous square portions with a simple green salad and crusty bread. A wedge of lemon on the side is optional but brightens each bite. Let it rest fully before serving or the layers will slide apart.

**Wine or Drink Pairing:** A medium-bodied Agiorgitiko from Nemea - Greece's most celebrated red grape - is the classic match, its soft tannins and red fruit complementing the cinnamon-spiced lamb beautifully. A Xinomavro from Naoussa offers a bolder and more tannic alternative for those who like a serious glass with a serious dish.

**Possible Recipe Variations:** Beestrot Signature: Add a thin layer of roasted red peppers between the eggplant and meat sauce - their sweetness cuts through the richness and adds a jewel-toned color when the moussaka is sliced. Variations: Vegetarian Moussaka - replace meat with a mixture of lentils / mushrooms / and walnuts cooked in the same spiced tomato sauce. Potato Moussaka - add a layer of thinly sliced parboiled potatoes under the eggplant for a more substantial and Cretan-style version. Individual Moussaka - bake in ramekins for elegant dinner party presentations.

**Additional Notes:** The cinnamon and allspice in the meat sauce are non-negotiable - they are the DNA of Greek moussaka. Do not substitute Italian seasoning; this is not that dish.
