Paella is Spain's most iconic export to the world's dinner tables, and the Valencians will be the first to tell you that most of what you've eaten abroad wasn't the real thing. Born in the rice paddies and orange groves of Valencia in the 19th century, the original combined rabbit, chicken, green beans, and saffron-scented rice cooked in a wide shallow pan over an open wood fire. That characteristic socarrat - the golden crispy rice crust that forms on the bottom - is the mark of a paella done right, and the reason the pan never gets stirred once the rice goes in.

**Cooking Method:** Stovetop - Sauteing

#### Ingredients

- 2 lbs chicken thighs (bone-in)
- 1 lb rabbit pieces (or substitute more chicken)
- 1/2 lb flat green beans (trimmed / cut into 2-inch pieces)
- 1 can (14 oz) white butter beans (drained)
- 3 cups bomba or Calasparra rice (short-grain paella rice)
- 6 cups chicken stock (warm)
- 4 tbsp olive oil
- 1 large tomato (grated / skin discarded)
- 4 garlic cloves (minced)
- 1 tsp sweet smoked paprika
- 1/2 tsp saffron threads (soaked in 3 tbsp warm water)
- salt to taste
- fresh rosemary sprig
- lemon wedges to serve

#### Instructions

1. Heat olive oil in the paella pan over medium-high heat. Season chicken and rabbit generously with salt. Sear meat until deep golden brown on all sides, about 10 minutes total. Move to the edges of the pan.
2. In the center, saute garlic briefly, then add grated tomato. Cook down for 5 minutes, stirring until the sofrito is thick and fragrant - this is the flavor base everything else builds on.
3. Add smoked paprika and stir for 30 seconds. Add green beans and butter beans, mix everything together.
4. Pour in warm stock and saffron water. Bring to a boil. Taste the broth now - it should be well-seasoned because the rice will absorb it all.
5. Distribute rice evenly across the pan in a single layer. Tuck in the rosemary sprig. From this point forward, you do not stir - not even once. This is the sacred rule of paella.
6. Cook on high for 10 minutes until most of the liquid is absorbed. Reduce heat to low and cook 10 more minutes.
7. In the final 2 minutes, increase heat to medium-high to develop the socarrat - listen for a faint crackling from the bottom of the pan. That sound is success.
8. Remove from heat, cover loosely with foil or newspaper (the Valencian way) and rest 5 minutes. Serve directly from the pan with lemon wedges.

### Storage & Make-Ahead [#](#)

**Storage Advice:** Best eaten immediately from the pan. Leftovers refrigerate up to 2 days - reheat in a skillet with a splash of water to revive.

**Make-Ahead & Freezing Tips:** Not recommended for freezing - rice texture deteriorates significantly. Make fresh and serve the day of.

### Serving & Variations [#](#)

**Serving Suggestions:** Serve the paella pan in the center of the table and let guests serve themselves - this is the authentic Valencian way. Provide lemon wedges and a simple green salad alongside.

**Wine or Drink Pairing:** A chilled Valencian white wine like Merseguera from Denominacion de Origen Valencia is the local pairing. A dry Cava from Penedes works beautifully too - the bubbles cut through the richness of the meat and rice.

**Possible Recipe Variations:** Beestrot Signature: Add a handful of dried wild mushrooms (porcini) soaked in the warm stock before adding the rice - they contribute a deep earthy umami that plays off the saffron in a way that feels like cheating but is completely worth it. Variations: Paella de Mariscos - replace meat entirely with prawns / mussels / clams and squid for a seafood version. Mixed Paella - combine chicken with prawns and mussels for the restaurant classic. Vegetarian Paella - use artichoke hearts / peppers / mushrooms and vegetable stock.

**Additional Notes:** Bomba or Calasparra rice is essential - regular long-grain rice will turn mushy. The wide shallow pan is also non-negotiable for proper socarrat formation.
