Street food royalty across the entire Indian subcontinent, samosas have been feeding people for over a thousand years - their origins trace back to Central Asian traders who brought the concept along the Silk Road. These golden crispy pastry pyramids stuffed with spiced potatoes and peas are found everywhere from Delhi street carts to London corner shops, and for good reason: nothing beats that first crunch into a hot samosa.

**Cooking Method:** Frying

#### Ingredients

- 3 cups all-purpose flour
- 1/2 tsp carom seeds (ajwain)
- 1/2 tsp salt
- 6 tbsp oil (for dough)
- cold water as needed
- 4 large potatoes (boiled and mashed)
- 1 cup frozen peas (thawed)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 medium onion (finely diced)
- 2 garlic cloves (minced)
- 1 tsp fresh ginger (grated)
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 2 tbsp fresh cilantro (chopped)
- salt to taste
- oil for deep frying

#### Instructions

1. Make the dough: mix flour, carom seeds, and salt. Rub in oil until the mixture resembles breadcrumbs. Gradually add cold water, kneading into a firm smooth dough - firmer than bread dough. Cover and rest 30 minutes. The firmness is intentional; it is what gives samosas their signature crunch.
2. Make the filling: heat oil in a skillet, add cumin seeds and let sizzle 30 seconds. Add onion and cook until golden. Add garlic and ginger, cook 1 minute.
3. Add all dry spices, stir 30 seconds until fragrant - your kitchen now smells like an Indian bazaar at peak lunch hour.
4. Add mashed potatoes and peas, mix well. Season with salt and fold in cilantro. Cool completely before filling - warm filling creates steam that softens the pastry.
5. Divide dough into 12 portions. Roll each into an oval, cut in half. Form a cone from each half, seal the straight edge with water.
6. Fill cone with 2 tablespoons of filling, press firmly to eliminate air pockets (air pockets equal exploding samosas - ask anyone who has learned this the hard way). Seal the top edge firmly.
7. Heat oil in a deep pot to 325 degrees F (165 degrees C) - lower than you think. Fry samosas in batches for 8-10 minutes, turning occasionally, until evenly golden. Low and slow is the secret to a crispy shell without a raw center.
8. Drain on paper towels and serve immediately with mint chutney and tamarind sauce.

### Storage & Make-Ahead [#](#)

**Storage Advice:** Best eaten fresh. Store unfilled dough and cooked filling separately in the fridge for up to 2 days and assemble to order.

**Make-Ahead & Freezing Tips:** Freeze uncooked assembled samosas on a tray, then transfer to a bag. Fry directly from frozen at 325 degrees F (165 degrees C) for 12-15 minutes. Do not thaw first.

### Serving & Variations [#](#)

**Serving Suggestions:** Arrange upright in a rustic basket or on newspaper for street-food charm. Serve with bright green mint-cilantro chutney and dark tamarind chutney side by side for maximum contrast.

**Wine or Drink Pairing:** A cold mango lassi is the ultimate match. For wine, a crisp Chenin Blanc from the Loire Valley (Vouvray) handles the spice and richness with grace.

**Possible Recipe Variations:** Beestrot Signature: Add a tablespoon of crumbled paneer and a pinch of dry mango powder (amchur) to the filling for a tangy creamy depth that elevates the classic. Variations: Keema Samosas - replace potato filling with spiced ground lamb. Mini Samosas - make bite-sized versions for party trays. Baked Samosas - brush with oil and bake at 400 degrees F (200 degrees C) for 25 minutes for a lighter option (texture differs but flavor stays).

**Additional Notes:** Cool the filling completely before assembling - warm filling creates steam that softens the pastry before frying.
