Ask any Spaniard what they eat when there is nothing to eat and the answer is always tortilla. This golden potato-and-egg omelette is Spain's most democratic dish - eaten for breakfast with coffee, packed into a bocadillo for lunch, served as tapas in every bar from Bilbao to Seville, and pulled from the fridge at midnight. The debate over whether to include onion (with or sin cebolla) has divided Spanish households for generations with the passion usually reserved for football. Both sides are right, and both are delicious.

**Cooking Method:** Stovetop - Sauteing

#### Ingredients

- 6 large eggs
- 4 medium potatoes (peeled / thinly sliced)
- 1 large onion (thinly sliced / optional but recommended)
- 1 cup olive oil (for frying potatoes)
- salt to taste

#### Instructions

1. Heat olive oil in a large skillet over medium heat. Add potato slices and onion with a generous pinch of salt. Cook slowly, stirring occasionally, for 20 minutes until potatoes are tender but not browned - you are confiting them in oil, not frying. They should be soft enough to break apart with a spoon.
2. Drain potatoes and onion through a colander, reserving the oil for another use (it is now beautifully flavored potato oil and too good to waste).
3. Beat eggs well with a pinch of salt in a large bowl. Add warm potato-onion mixture and mix gently. Press potatoes slightly to break some pieces - you want a rough mash, not a puree. Rest 5 minutes for the eggs to absorb everything.
4. Heat 2 tablespoons of the reserved oil in the skillet over medium heat. Pour in the egg-potato mixture, shaping it into an even round. Cook 4-5 minutes until the edges are set but the center is still slightly wobbly.
5. Now comes the flip - the move that has broken hearts and yolks across Spain. Place a large plate face-down over the skillet and in one confident motion flip the tortilla onto the plate. Slide it back into the pan uncooked side down. Cook 2-3 more minutes.
6. Slide onto a clean plate and rest at least 10 minutes before cutting. Tortilla is best served warm or at room temperature - never piping hot.
7. Cut into wedges or small cubes for tapas, or thick slices for a meal.

### Storage & Make-Ahead [#](#)

**Storage Advice:** Refrigerate up to 3 days. Improves significantly at room temperature the next day as the flavors meld. Do not reheat - serve at room temperature or cold.

**Make-Ahead & Freezing Tips:** Not suitable for freezing - egg texture becomes watery. Make fresh, it keeps well in the fridge.

### Serving & Variations [#](#)

**Serving Suggestions:** Cut into small cubes secured with toothpicks for tapas style. Serve at room temperature with a simple green salad and crusty bread alongside for a complete lunch.

**Wine or Drink Pairing:** A chilled Manzanilla sherry from Sanlucar de Barrameda is the quintessential pairing - its saline notes echo the potatoes perfectly. A young Rioja Blanco or an unoaked Albario from Rias Baixas both work wonderfully for wine drinkers.

**Possible Recipe Variations:** Beestrot Signature: Add a tablespoon of truffle oil to the beaten eggs just before cooking - it transforms the humble tortilla into something genuinely luxurious without changing the comforting texture one bit. Variations: Tortilla with Peppers - add roasted red peppers to the potato mixture for a sweeter and more colorful version. Tortilla with Chorizo - fry thin slices of chorizo with the potatoes for a meaty variation. Cold Tortilla Sandwich - the classic Madrid bocadillo de tortilla is arguably the greatest sandwich in the world.

**Additional Notes:** The flip is the only truly tricky step. Use a plate larger than the pan, move decisively, and have a towel handy. The second side needs only 2-3 minutes - most people overcook it. The interior should remain slightly creamy.
