How to Boil an Egg

Simple, Not Easy

You’d think boiling an egg is easy — until the shell cracks, the yolk turns grey, or it just won’t peel without turning into modern art. But fear not, Chef. Whether you’re building brunch or prepping a Niçoise salad, mastering the humble boiled egg is a foundational skill every cook should have. It’s not just technique; it’s a rite of passage.

Choose Your Level: Soft, Medium, or Hard?

Let’s start with the goal. Here’s a quick guide based on large eggs straight from the fridge:

DonenessYolks Look LikeTime in Boiling Water
SoftRunny and golden6 minutes
MediumSlightly creamy8 minutes
HardFully set, bright10 minutes

A note for the perfectionists: Add 30 seconds for extra-large eggs, subtract 15 seconds for room-temp eggs.

Method: Step-by-Step

  1. Prep the Eggs: Use a pin to prick the wide end if you want to reduce cracking. Optional, but chef-approved.
  2. Bring Water to a Gentle Boil: Enough to cover the eggs by 1 inch.
  3. Lower Eggs In Gently: Use a spoon. We’re cooking, not bowling.
  4. Start the Timer: The moment they hit the water.
  5. Mind the Boil: Maintain a steady simmer. Rolling boil = rubbery whites.
  6. Ice Bath Finish: When time’s up, plunge eggs into ice water for at least 5 minutes. This stops cooking and makes peeling much easier.

Troubleshooting: Cracks, Grey Rings & Sticky Shells

  • Cracked Eggs? Cold egg, hot water. Try room temp or lower in gently.
  • Green-Grey Yolks? Overcooked. Watch the timer like it owes you money.
  • Hard to Peel? Too fresh! Older eggs peel better. Ice baths help too.

Around the World in 6 Eggs

  • Turkey: Cilbir (poached-style, in garlic yogurt)

Pro Tips From the Line

I still remember the first egg I tried to boil… it cracked, leaked, and looked more like a science experiment than breakfast 😅
