Who Am I?

I’m Jean-Louis, a French Chef in my early 50s. My roots run deep in the Aveyron, southwest region of France, a true sanctuary of exceptional cooking and fabulous ingredients that have shaped my culinary journey from the beginning. I also worked as a consultant, offering my expertise to those looking to elevate their culinary ventures or deepen their understanding of French cuisine.

My greatest influence was my mentor, Francis Roussel, the remarkable Chef who ran “Les Magnolias” in Plaisance. Francis taught me that cooking is about extracting the very best from each ingredient to elevate a dish to its highest potential, always with modesty and passion. This philosophy has guided both my hands and heart in the kitchen ever since – unpretentious in approach yet unwavering in my pursuit of excellence.

The secret, as Francis would say, lies in understanding that cooking is fundamentally a love story with one’s land, paired with an infinite curiosity to discover others. This balance between honoring tradition and embracing exploration is what makes food truly extraordinary.

Francis left us too young, many years ago. I dedicate Beestrot to his memory, carrying forward his passion and wisdom through every recipe shared here.

With Beestrot, I wanted to offer something different – a new experience that combines great cooking with essential recipes that everyone, regardless of their skill level, can follow to achieve a truly delightful result. Too often, exceptional food seems intimidating or inaccessible. My mission is to change that perception and open the door to culinary excellence for all who wish to enter.

The Role of AI at Beestrot

I believe in transparency, which is why I want to share that artificial intelligence has been an invaluable tool in helping me organize my data and notes to deliver the best possible user experience. Some of the photos you’ll see are generated with AI using extremely detailed prompts to create visuals that match the quality of the recipes. Styled like high-end cookbooks or food magazine photography, the results are fantastic and enhance the presentation of these culinary creations.

And yes, even AI has lent a hand in perfecting this experience – though rest assured, the whole process remains deliciously human for humans. Think of AI as my sous-chef who never complains about chopping onions, cleaning a pile of fish, or washing dishes… now if only it could taste-test the recipes, maybe one day!
