Ingredients
- 3 very ripe bananas (mashed)
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg (beaten)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- 1/4 cup chopped walnuts
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon cold butter (diced)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until mostly smooth - a few lumps add character!
- Mix in melted butter, then add sugar, beaten egg, and vanilla.
- Sprinkle baking soda and salt over the mixture, then gently fold in flour until just combined - don't overmix or you'll have tough bread.
- For the streusel topping, combine walnuts, brown sugar, and cinnamon in a small bowl, then cut in cold butter until crumbly.
- Pour batter into prepared pan and sprinkle streusel on top.
- Bake for 60-65 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes before removing - your patience will be rewarded!
