Ingredients
- 2 lbs bone-in chicken thighs (skin removed)
- 2 tablespoons olive oil
- 1 large onion (diced)
- 3 carrots (sliced)
- 3 celery stalks (sliced)
- 3 cloves garlic (minced)
- 8 cups water
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 8 oz wide egg noodles
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon fresh dill (chopped)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened, about 8-10 minutes - this mirepoix base is your flavor foundation!
- Add garlic and cook for 1 minute until fragrant.
- Add chicken thighs, water, bay leaves, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper. Bring to a boil, then reduce heat and simmer gently for 45 minutes until chicken is tender and falling off the bone.
- Remove chicken from pot and let cool slightly, then shred meat and discard bones and any remaining skin - the meat should be incredibly tender!
- Strain the broth through a fine mesh strainer, pressing vegetables to extract maximum flavor, then return clear broth to pot.
- Bring broth back to a simmer and add egg noodles. Cook according to package directions until tender, about 8-10 minutes.
- Return shredded chicken to pot and season with salt and pepper to taste.
- Stir in fresh parsley and dill just before serving - the herbs brighten everything up beautifully!
- Ladle into bowls and serve piping hot with crackers or crusty bread for the ultimate comfort experience.
