Ingredients

  • 3 very ripe bananas (mashed)
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/4 cup chopped walnuts
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cold butter (diced)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until mostly smooth - a few lumps add character!
  3. Mix in melted butter, then add sugar, beaten egg, and vanilla.
  4. Sprinkle baking soda and salt over the mixture, then gently fold in flour until just combined - don't overmix or you'll have tough bread.
  5. For the streusel topping, combine walnuts, brown sugar, and cinnamon in a small bowl, then cut in cold butter until crumbly.
  6. Pour batter into prepared pan and sprinkle streusel on top.
  7. Bake for 60-65 minutes until a toothpick comes out clean.
  8. Cool in pan for 10 minutes before removing - your patience will be rewarded!
