Ingredients

  • 2 lbs chicken thighs or breasts (cut into pieces)
  • 1 cup plain Greek yogurt
  • 2 tablespoons vegetable oil
  • 1 large onion (diced)
  • 4 cloves garlic (minced)
  • 2 inches fresh ginger (minced)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons
  • fresh cilantro (chopped)
  • Cooked rice for serving

Instructions

  1. In a bowl, marinate chicken pieces in Greek yogurt for 15-20 minutes - this tenderizes beautifully!
  2. Heat oil in a large skillet over medium-high heat.
  3. Remove chicken from marinade and brown on all sides, about 6-8 minutes total. Remove and set aside.
  4. In the same pan, sauté onions until golden, about 5 minutes.
  5. Add garlic and ginger, cook for 1 minute until fragrant.
  6. Here comes the magic - add cumin, coriander, turmeric, paprika, and cayenne. Toast for 30 seconds until aromatic and your kitchen smells incredible!
  7. Stir in diced tomatoes and cook for 5 minutes until slightly reduced.
  8. Return chicken to pan, add coconut milk, salt, and pepper.
  9. Simmer gently for 20-25 minutes until chicken is cooked through and sauce has thickened.
  10. Garnish with fresh cilantro and serve over rice - prepare for compliments!
