Ingredients

  • 2 lbs bone-in chicken thighs (skin removed)
  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 3 carrots (sliced)
  • 3 celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 8 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 8 oz wide egg noodles
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened, about 8-10 minutes - this mirepoix base is your flavor foundation!
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add chicken thighs, water, bay leaves, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper. Bring to a boil, then reduce heat and simmer gently for 45 minutes until chicken is tender and falling off the bone.
  4. Remove chicken from pot and let cool slightly, then shred meat and discard bones and any remaining skin - the meat should be incredibly tender!
  5. Strain the broth through a fine mesh strainer, pressing vegetables to extract maximum flavor, then return clear broth to pot.
  6. Bring broth back to a simmer and add egg noodles. Cook according to package directions until tender, about 8-10 minutes.
  7. Return shredded chicken to pot and season with salt and pepper to taste.
  8. Stir in fresh parsley and dill just before serving - the herbs brighten everything up beautifully!
  9. Ladle into bowls and serve piping hot with crackers or crusty bread for the ultimate comfort experience.
