Souvlaki is Greece grilled and eaten standing up. These short skewers of marinated pork or chicken char over charcoal in every street corner grill shop from Athens to Mykonos, and the smell alone is enough to make you forget whatever you were doing. Served tucked into warm pita with tzatziki, tomatoes, red onion, and a handful of fries stuffed inside - this is the Greek answer to fast food, and it is profoundly better than the competition. The word souvlaki simply means little skewer, but wrapped in pita with all the trimmings it becomes one of the most satisfying things you can eat.

Method & Ingredients

Required Equipment: Metal or soaked wooden skewers, grill or grill pan, grater for tzatziki

Cooking Method: Grilling - Broiling

Ingredients

  • 1.5 lbs pork shoulder or chicken thighs (boneless / cut into 3 cm cubes)
  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 garlic cloves (minced)
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • salt and pepper
  • For tzatziki: 1 cup Greek yogurt / 1 cucumber (grated and squeezed dry) / 2 garlic cloves (minced) / 1 tbsp olive oil / 1 tbsp fresh dill / salt
  • To serve: 4 pita breads / sliced tomatoes / sliced red onion / fresh parsley

Instructions

  1. Make the tzatziki first: grate cucumber / squeeze out all moisture in a clean cloth. Mix with yogurt / minced garlic / olive oil / dill / and salt. Refrigerate - it improves with time and can be made a day ahead. A well-made tzatziki should taste clean / garlicky / and cool.
  2. Marinate meat: combine olive oil / lemon juice / garlic / oregano / paprika / salt / and pepper. Add meat cubes / toss to coat / and marinate at least 1 hour - 4 hours is better. Overnight in the fridge is the professional move.
  3. Thread meat onto skewers - not too tightly packed or the inside steams instead of chars.
  4. Grill over high heat (or grill pan / or under the broiler) for 10-12 minutes total / turning every few minutes until charred on the outside and just cooked through. The char is not an accident - it is the whole point.
  5. Warm pita breads directly on the grill for 30 seconds per side.
  6. Serve skewers on or off the pita with generous tzatziki / sliced tomato / red onion / and chopped parsley. The Greek way is to wrap everything in the pita like a soft taco. The right way is however makes you happiest.
  7. A squeeze of fresh lemon over everything just before eating is mandatory.

Storage & Make-Ahead

Storage Advice: Marinated uncooked meat keeps 24 hours refrigerated. Cooked skewers refrigerate up to 3 days. Tzatziki keeps 3 days refrigerated.

Make-Ahead & Freezing Tips: Freeze marinated raw meat up to 2 months. Do not freeze cooked skewers or tzatziki.

Serving & Variations

Serving Suggestions: Serve on a platter family style with the pita / tzatziki / and salad accompaniments separate so everyone builds their own wrap. A plate of sliced raw onion marinated in lemon juice and dried oregano alongside is the authentic Greek way.

Wine or Drink Pairing: A cold glass of Assyrtiko from Santorini is the refreshing mineral match. For red wine lovers / a light Agiorgitiko rose from Nemea complements the charred meat beautifully. A cold Mythos or Fix lager is the most authentic street-food pairing.

Possible Recipe Variations: Beestrot Signature: Add a tablespoon of honey to the marinade for the last 30 minutes only - the sugars caramelize over the grill producing a lacquered glaze and deeper char that makes these skewers genuinely restaurant-level. Variations: Chicken Souvlaki - use boneless thighs instead of pork / marinate with lemon and thyme. Lamb Souvlaki - use leg of lamb for a more traditional and festive version. Vegetable Souvlaki - thread halloumi / peppers / courgette / and red onion for a vegetarian version that chars beautifully.

Additional Notes: Greek yogurt must be full-fat and strained for proper tzatziki - low-fat versions produce a watery sauce that soaks the pita. Squeeze the cucumber absolutely dry or the tzatziki will weep.
