Ingredients
- 4 slices good quality bread (like sourdough or brioche)
- 4 oz aged cheddar cheese (sliced)
- 2 oz Gruyère cheese (sliced)
- 2 tablespoons mayonnaise
- 2 tablespoons butter (softened)
- Optional: thin tomato slices
- Dijon mustard
Instructions
- Let ingredients come to room temperature for even melting - cold cheese won't melt properly before the bread burns!
- Layer the cheeses between bread slices, alternating cheddar and Gruyère for optimal melting and flavor.
- Spread mayonnaise thinly on the outside of each sandwich - this is the secret to perfect browning!
- Heat a large skillet over medium-low heat and add a pat of butter.
- Place sandwiches in pan and cook slowly, about 3-4 minutes per side, until deep golden brown and cheese is completely melted - patience is key here!
- Press gently with spatula to ensure even contact and melting, but don't smash the sandwich.
- Flip carefully when the first side is perfectly golden and crispy.
- Cook second side until equally golden and cheese is visibly melted and oozing slightly.
- Remove from heat and let rest for 1 minute before cutting diagonally - this prevents all the cheese from escaping!
- Serve immediately while the cheese is still molten and stretchy.
