The name means fierce potatoes, and while the cubes of crispy fried potato themselves are quite well-behaved, the bravas sauce that coats them earns the title. This is the tapa you will find in every single bar across Spain - from the most tourist-polished terrace in Barcelona to the oldest tile-walled taverna in Madrid - and the debate over who makes the best version is eternal. The Madrileo insists on a spicy tomato sauce only. The Barcelonan adds aioli. Both are convinced the other is wrong. The correct answer is to serve both and let your guests decide.

Method & Ingredients

Required Equipment: Large pot for frying, slotted spoon, small saucepan for sauce, blender or hand blender for aioli

Cooking Method: Frying

Ingredients

  • 2 lbs potatoes (waxy or all-purpose / peeled / cut into 1.5-inch cubes)
  • oil for deep frying
  • salt
  • For bravas sauce: 3 tbsp olive oil / 3 garlic cloves (minced) / 1 tsp smoked sweet paprika / 1/2 tsp hot paprika / 1 tbsp flour / 1 cup chicken or vegetable stock / 2 tbsp sherry vinegar / salt
  • For aioli: 2 garlic cloves / 1 egg yolk / 1 tsp Dijon mustard / 150ml neutral oil / 1 tbsp lemon juice / salt

Instructions

  1. Make the bravas sauce: heat olive oil in a small saucepan over medium heat. Add garlic and cook 1 minute. Add both paprikas and stir 30 seconds until bloomed and fragrant - your kitchen will start smelling unmistakably Spanish right about now. Add flour and stir to form a paste. Gradually whisk in stock until smooth. Add sherry vinegar. Simmer 5 minutes until thickened. Blend until smooth if you prefer a silky texture. Season and set aside.
  2. Make the aioli: blend garlic and egg yolk with mustard and a pinch of salt. With blender running / drizzle in oil drop by drop until emulsified / then in a thin stream. Add lemon juice / adjust seasoning. Refrigerate until needed.
  3. Parboil potato cubes in well-salted water for 8 minutes until just tender but not falling apart. Drain and dry very thoroughly - any moisture in the oil will make the potatoes spit at you like they are offended.
  4. Heat oil to 375 degrees F (190 degrees C). Fry potatoes in batches for 4-5 minutes until deeply golden and crispy. Drain on paper towels and season immediately with salt.
  5. Arrange potatoes on a serving plate. Drizzle generously with warm bravas sauce and dot with aioli - or serve both sauces on the side and let people choose their own adventure.

Storage & Make-Ahead

Storage Advice: Bravas sauce and aioli both refrigerate well up to 5 days. Fried potatoes are best fresh but can be re-crisped in a 400 degrees F (200 degrees C) oven for 10 minutes.

Make-Ahead & Freezing Tips: Bravas sauce freezes well for up to 2 months. Aioli does not freeze. Potatoes do not freeze once fried.

Dietary Information: Contains eggs and gluten. Dairy-free as written. Easily made gluten-free by replacing flour with cornstarch in the bravas sauce.

Serving & Variations

Serving Suggestions: Serve on a terracotta dish with two small pots of sauce alongside. A cold beer or a glass of chilled Manzanilla in hand is not optional - it is the full experience.

Wine or Drink Pairing: A cold Estrella Damm lager is the most authentic pairing. For wine, a chilled Txakoli from the Basque Country - bone dry with a slight spritz - cuts through the oil perfectly.

Possible Recipe Variations: Beestrot Signature: Toss the just-fried potatoes with a pinch of saffron-infused salt (dissolve a few saffron threads in warm water / then mix into sea salt and dry) for a subtle golden perfume that elevates the dish into something genuinely special. Variations: Patatas Alioli - skip the bravas sauce and serve only with thick garlic aioli for a gentler version. Baked Bravas - toss potatoes in oil and roast at 425 degrees F (220 degrees C) for 35 minutes for a lighter option. Bravas with Chorizo - add thin slices of fried chorizo on top for a heartier tapa.

Additional Notes: The parboil-then-fry double-cooking method is the secret to potatoes that are fluffy inside and properly crispy outside. Single-fry potatoes are inferior - do not skip the parboil.
